IMA Cafe – Pasta Primavera
If you’re a regular at the IMA Cafe or haven’t made your way over to the Indianapolis Museum of Art to try our light and fresh cafe food, I would highly recommend it. One of our popular items that our cafe visitors order is the Pasta Primavera. With fresh spinach, cherry tomatoes, and other great ingredients guests love this dish to satisfy their appetite before walking the grounds or visiting the galleries. One of the cafe cooks walked me through, step by step, how to prepare this fabulous dish.
Let’s take a walk through the ingredients step by step for your at home preparation:
1. Start by boiling pasta for 4-5 minutes until al dente, pasta will finish cooking at the end with all other ingredients.
2. Saute garlic, spinach, artichokes, and tomatoes with olive oil, and salt and pepper until spinach starts to wilt. This should take just as long as the pasta is in the boiling water.
3. After spinach is wilted and veggies get a little color, add the pasta to the skillet to finish the cooking. Toss all ingredient in the skillet for 1-2 minutes until veggies and oil coat the noodles.
4. When ready to serve put the pasta in your favorite serving dish and top with a drizzle of nice olive oil and parmesan cheese.
